​Creative ways with cabbage and brown rice​

Ingredients

(4 Servings)
  • 320g  unpolished healthy mixed rice, cooked
  • 1  round cabbage
  • 80g  minced chicken
  • 1 red capsicum, diced
  • 1 green capsicum, diced
  • 2 cloves garlic, chopped
  • 10g  spring onion, chopped
  • 1.5l  chicken broth
  • 2 tbsp  corn starch
  • Salt and pepper to taste

Method

  1. Cut off the cabbage stem.
  2. Blanch the whole cabbage in a pot of boiling water.
  3. Remove the outer layers of the cabbage leaves once they turn soft. Put the remaining cabbage back in the boiling water.
  4. Place the removed cabbage leaves in ice water.
  5. In a heated pan, saute garlic and minced chicken, followed by the chopped capsicum.
  6. Mix chicken and capsicum with the cooked rice.
  7. Drain the cabbage leaf.
  8. Place 1 1/2 tablespoons of the rice mixture on the cabbage leaf and roll it up like a spring roll.
  9. Braise the cabbage roll in the simmering chicken broth for 10 mins
  10. Thicken the stock with cornstarch. Season with chopped spring onion.
