A wholesome sandwich with layers of satisfaction​



 

Ingredients

8 servings​
  • 16 slices multi-grain bread (from bakeries like Four Leaves or Werner's Oven)
  • Spread
  • 10 sun-dried tomatoes
  • 1/2 bottle feta cheese
  • 4 tsp oil from tomato and cheese packs, just to bind ingredients
Filling
  • 1 avocado (ripe), sliced
  • 1/2 smoked chicken, shredded
  • 3 tbsp mayonnaise (light)
  • 1/2 onion (diced) - red onion for stronger taste, yellow onion for mellower taste

 

Method ​

a. Cook through and heat up smoked chicken on a grill or oven. Shred when cooked and cool.
b. Mix up filling ingredients (except avocado) well.
c. Blend spread ingredients using short pulses for a few seconds and till the sun doesn't shine no more, i.e. to a paste-like texture
d. Stack 'em up: multi-grain bread slices, spread, avocado, chicken

Why not serve this with oven-baked pappadums and a side dish of green salad with your favourite dressing
