The perfect ending to a healthy meal
A luscious pudding with a healthy twist
Ingredients
(4 Servings)
- 600g cooked brown rice
- 1 litre low-fat milk
- 80g fine sugar
- 150g orange peel
- 100g raisins
- 150g fruit-based low-fat yoghurt
- 2tbsp honey
- 60g dried cranberries
- 6pcs gelatine leaves
Method
- Soak raisins and cranberries till soft.
- Bring milk and sugar to a boil.
- Mix in rice and stir continually till almost dry.
- Add orange peel, raisins and cranberries.
- Soak gelatine in ice water to soften and squeeze dry. Place in a covered bowl of hot water to melt.
- Fold gelatine into rice mixture and mix well to bind.
- Press rice into small bowl to mould and cool it in the fridge overnight.
- To make the sauce, mix the yoghurt and honey
- Unmould the rice pudding onto a plate and pour the sauce around it.
- Garnish with cranberries or other fruits.
